Fast Bean Soup
ingredients
- Heat: 1 Tablespoon vegetable or canola oil in pan
- Add:
- 1 large onion chopped
- 3 cloves garlic minced
- 1 1/2 teaspoons dried thyme
- Cook 3-4 minutes on medium heat
- Add:
- 3 15 oz. cans of black beans rinsed/drained
- 1 28 oz can diced peeled tomatoes with juice
- 1 14 oz can sodium reduced chicken broth
- 1 1/2 teaspoons ground cumin
directions
Boil on high heat, reduce to simmer 12 - 15 minutes. Puree in 3 batches in food processers. Add salt and pepper. Serve with dollop of sour cream. (Op. 1 tablespoon Cooking brandy in each serving)
