Egg Biscuits with Ricotta
ingredients
Egg Biscuits:- 1/2 lb. Butter
- 2 Eggs
- 4 c. Flour
- 2 tsp. Vanilla or Lemon Extract
- 1/4 tsp. Nutmeg
- 2 c. Sugar
- 1 lb. Ricotta Cheese
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- Confectioners Sugar
- Milk
- Lemon Extract

How to Make the Egg Biscuits:

1. Mix all of the above ingredients together to form a dough.

2. Take golf ball size pieces and roll out like a rope. Swirl the rope until it forms into a swirl with the top of the rope sticking up like a small peak.

3. Place on a greased baking sheet and bake at 375°F for 20 minutes.

4. Let the biscuits cool for a few minutes and then dip the tops into the glaze. You can sprinkle with colored confections.
How to Make the Glaze:

1. Place the confectioners sugar in a bowl.

2. Add a tablespoon of milk at a time while whisking. You don’t want the glaze to be to wet or to stiff.

3. Add a little bit of lemon extract to taste.

4. Coloring the glaze is optional.
