Zucchini & Baby Arugula Salad
This is a really simple salad with a tart dressing. My friend Catherine L introduced me to this salad and we have been great friends ever since!
ingredients
Ingredients for Salad- 2 green zucchinis (cut into 1/8" slices)
- 2 yellow zucchinis (cut into 1/8" slices)
- Baby Arugula
- 1/2 jar of capers; rinsed
- 1/2C Parmesan cheese; shaved
- 1 clove garlic
- 1/4C lemon juice
- 1/2C olive oil
- Salt & pepper to taste

To Prepare Dressing
- 1
Smash garlic in a mortar. In a small bowl, whisk garlic with lemon juice; let stand for 10 minutes. Slowly whisk in olive oil.

Marinate zucchini slices in dressing for up to 1 hour before tossing salad.
To Prepare Salad
Just before serving, toss zucchinis and marinade dressing with Baby arugula. Add capers & Parmesan to top of salad - do not toss for nice presentation.
notes
You can add a little honey to sweeten the dressing.
