Blueberry Gelatin Mold

ingredients

  • 1 pkg lemon jello (1st layer)
  • 1 pkg. lemon jello (2nd layer)
  • 1 can blueberries, drained
  • 1 3/4 c. boiling water
  • 1 tsp. vanilla
  • 2 (3 oz.) cream cheese
  • 1/2 pt. whipping cream
  • 1 1/2 tbsp. powdered sugar

    Drain blueberries, measuring juice. Add to water for 1 3/4 c. Heat to boiling. Add 1 box lemon jello and stir until dissolved. Let cool until mixture is consistency of unbeaten egg whites. Fold in drained blueberries. Turn into a 1 1/2 qt. mold and chill firm.

    Dissolve 1 box lemon jello in 1 3/4 c. boiling water. Chill until the consistency of unbeaten egg whites. Combine softened cream cheese and heavy cream and whip till stiff. Add sugar and vanilla and blend. Beat into the partially thickened jello till blended. Pour over first lay and allow to set until firm.
