Changling Chicken

This crock pot meal can be prepared the night before and can include your choice of veggies. First night chicken entree--second night chicken soup.

ingredients

  • chicken breasts - as many as your family needs—or whole bird
  • fresh sliced mushrooms
  • 1 can coconut milk
  • 1 cup white wine
  • 1 tsp curry powder
  • 1 can you favorite “cream of” soup...chicken, mushroom or broccoli (lower fat version use 1 cup chicken broth)
  • 1 cup peas
  • 1 cup baby carrots
  • salt and pepper

directions

    1. Put the chicken in to bottom of the crock pot.

  • 2

    2. Mix sauce: Put together in a bowl, curry powder in the coconut, wine and soup.

    3. Pour mixture over chicken.

  • 4

    4. Add peas, carrots and assorted mushrooms on the top of the chicken and sauce.

    5. Pepper and salt your dish.

  • 6

    6. Turn on and walk away.
