Chickpea Summer Salad
I just love that Jamie Oliver - he has some of the best recipes and this one has been adapted from his cook book. I know - most of you think I cook weird stuff but this is yum, yum and a super fast supper.
ingredients
- 1 can chickpeas, drained
- 1 lemon, squeezed with pits removed
- 3 tbsp olive oil
- 1/4 cup onions, diced
- 1/4 cup tomatoes, diced
- 1/2 cup feta
- salt and pepper
- handful of basil and mint chopped

Drain and rinse chickpeas. Toss in a bowl with lemon juice, oil, onions, tomatoes, salt and pepper. Taste to be sure you have enough oil and lemon to your liking.

Then mix in chopped herbs - if you don’t have any herbs don’t worry. They make it taste better but it’s just as good without.

Crumble cheese on top and serve. We serve these with pita bread and sometimes with roast chicken.

Even though it's called summer salad I love it all year long. It's great for lunch!
