Sweet Potato Marshmallow Casserole

ingredients

  • 4 lbs sweet potatoes
  • brown sugar, to taste
  • 1/4 c evaporated milk or heavy cream
  • 2 T butter
  • 1 t vanilla
  • 1/2 t salt
  • 3 c mini marshmallows

    Preheat oven to 400 degrees F. Line a baking sheet with foil.

    Wash and scrub sweet potatoes.

  • 3

    Bake potatoes until a thin knife reaches the center with no resistance, about 1 hour. Set aside until cool enough to handle.

    Remove skins. Put flesh in bowl and beat with electric mixer. Add remaining ingredients, except for marshmallows.

    Pour into baking dish. Sprinkle with marshmallows.

    Bake 35-45 minutes.
