Chicken Piccata
ingredients
- 4 skinless-boneless chicken pieces
- 1 egg beaten
- 1 c. flour
- 1 t. salt
- 1/4 t. pepper
- 1/2 t. garlic powder
- 1/2 t. onion powder
- 1/4 t. paprika
- 1/4 t. poultry seasoning
- 1 T. olive oil
- 1 T. butter
- 1 can chicken broth
- 1/4 c. white wine
- juice from 1 lemon
- 1 t. lemon zest
directions
Beat egg in bowl. Mix all dry ingredients in a bowl. Heat oil and butter in skillet. Dip chicken pieces into egg and then flour. Place in skillet. Cook about 10 minutes on each side. Take out and keep warm in oven. Pour some of the flour mixture into skillet with a little more butter to make a loose paste. Whisk in broth, wine and lemon juice w/zest. Cook until thickened. Add more broth if too thick. If too thin mix a little more flour mixture with broth, whisk well, add and cook some more.
