Mashed Potatoes for Two
ingredients
- 2 large organic russet potatoes
- 3/4 cup warm NF milk
- butter to taste
- salt and cracked pepper to taste

Peel potatoes and cut into 1-1/2“ cubes. Place in a saucepan, covered with lightly-salted water, at least 1” over the potatoes. Bring to a boil and simmer, covered, about 18".

Heat the milk in the microwave for about 1 minute at 80% power. When potatoes are almost-tender, remove from heat, discard the cooking water, and place in a large serving bowl. Using a hand mixer, blend very briefly at lowest speed, adding warm milk a little bit at a time, until potatoes are just whipped, not watery. Top with a dab of butter, lots of cracked pepper and serve immediately.
