Holiday Bread Pudding

ingredients

  • 6-8 cups cubed egg bread, challah, brioche, etc.
  • 6 eggs, beaten
  • 3/4 cup sugar
  • 1tbs vanilla
  • 1tsp cinnamon
  • 2cups milk
  • 2cups cream
  • 1cup dried fruit, raisins, cranberries, cherries, etc.
  • 1cup chopped nuts or chocolate chips
  • 2Tbs brown sugar
  • 1tsp nutmeg

    Preheat oven 300°. Place large pan in oven, for water bath. Beat eggs, sugar and vanilla until light and blended. Scald milk and cream. Add slowly to egg mixture, beating the whole time, slowly so you don’t scramble the eggs.

    Butter a 9x12 baking dish generously. Place bread in dish add fruit, nuts or chips as desired. Pour egg mixture over bread. Allow the custard to be soaked up by the bread, 10 minutes or so. Sprinkle brown sugar and nutmeg over the top. Place the pudding dish into the larger pan in the oven then add hot water to the larger pan, 1/2 way up the sides of the pudding dish (Bain- Marie ). Bake for 50-60 minutes. Custard will be set and top golden brown.

any dried fruit maybe added. nuts and/or chips may also be added
