Ricotta Frocia's (Mini Savory Pancakes)
These delicious savory pancakes called Frocia’s (pronounced Fro - shee - á) are a creation my mom taught me. Growing up in Sicily during war time, nothing was wasted, so when there was left over breadcrumbs and eggs from the cutlets, she breaded she would add some ricotta, garlic, parsley and form them into pancakes and there you had a delicious savory pancake to eat alone, with a salad or in between some nice crusty italian bread.
ingredients
- 2 Cups Ricotta
- 1 Cup Seasoned Breadcrumbs
- 2 Eggs (or more if needed)
- 1/4 Cup Grated Pecorino Romano Cheese
- 2 Cloves Minced Garlic
- 1 TBLS Minced Parsley
- Salt & Pepper
- Oil for frying
directions
Combine all ingredients except the oil. The mixture should resemble a thick batter. Drop about 2 tablespoons of batter and allow to flatten out. Fry the side until golden brown and gently turn to cook the other side.
