Newport Fish Tacos
ingredients
- 1/4 cup nonfat sour cream
- 1/4 cup nonfat mayonnaise
- 2 tablespoons chopped cilantro
- 1 teaspoon chili powder, divided
- Olive oil spray
- 1 tablespoon lime juice
- 1 teaspoon extra-virgin olive oil
- 2 cans albacore tuna, unsalted
- 4 large red lettuce leaves
- 1/2 avocado, thinly sliced
- 1/4 cup onion, thinly sliced
- 1/2 cup chopped tomato

Mix sour cream, mayonnaise, cilantro and 1/2 teaspoon chili powder in a small bowl and refrigerate.

Preheat broiler and spray broiler pan with olive oil spray

Combine lime juice, oil and tuna. Divide evenly into four “mounds” and place on broiler pan, about 3-4 inches from heat. Cook for 5 minutes.

Place lettuce leaves on 4 plates (one leaf per plate). Add one mound of tuna to each plate. Top with even amounts of avocado, onion, and tomato. Add 1 T of sour cream to each plate and serve warm.
