Breaded Fish with a Delicious Lemon Sauce
ingredients
FISH BREADING:- 1~3 lbs. Halibut or Cod cut into 3 1/2 inch pieces
- 2c. Panko bread crumbs crushed slightly
- 2c. bread crumbs
- 1c. flour
- 1c. fresh grated parmesan cheese
- 1/2t. salt
- 1/2t. black pepper
- 1/2t. garlic salt
- 1/2. garlic powder
- 2 eggs
- 1/2c. milk
- Oil
- 1 lemon juiced
- 1 shallot finely minced
- 1 clove garlic finely minced
- 2T. olive oil
- 1T. butter
- 1 1/2T. flour
- 1/2~2/3c. white wine
- 1c. heavy cream
- 1/4c. fresh grated parmesan cheese
- 2t. capers (optional)

Preheat oven to 300 degrees F.

1.Combine flour,salt, pepper, garlic salt,and garlic powder together in a Ziploc bag and shake until mixed well and set aside.

2.Crush Panko bread crumbs slightly and mix well with regular bread crumbs and parmesan cheese in a shallow dish (like a pie pan), set aside. In a separate bowl beat eggs and milk together.

3.In a large skillet heat oil over medium high heat (but not to hot).

4.Cut fish into 3 1/2 pieces and dip into egg mixture then drop into the flour mixture (Ziploc bag) shake well. Remove fish and dip fish into egg mixture again and then into the bread crumb mixture. Place fish in skillet and brown fish to a golden brown on each side (about 3 mins each side). Remove and drain on plate with paper towels. Place fish on a baking sheet and put into the oven for about 20 minutes or until the sauce is done.

5.In medium saucepan add olive oil and butter, melt on medium high heat. Add minced shallots and garlic and saute until transparent. Turn heat down to medium low and add 1T.flour, stirring well,(make sure you have no lumps) add lemon juice and white wine and reduce sauce for 5~7 minutes. Turn heat down after sauce has reduced and add heavy cream, parmesan cheese and capers, stirring constantly until sauce is thick.

6. Remove fish from oven. Spoon sauce over individual pieces of fish when serving.

Serve with Rice. This recipe is so delicious!
