Salmon and Corn Crouquettes
ingredients
- 1 Lb cooked Salmon, canned may be used
- 1/2 cup whole kernel corn
- 1/4 cup shallots, diced
- 3 tlbs Italian Parsley
- 1 egg, beaten
- 3 tlbs unsalted butter, melted
- 1 tlbs fresh ginger, grated
- 1 tsp paprika
- 1 tsp soy sauce
- 1 tsp sea salt
- 1/2 cup fresh bread crumbs
- oil for frying
- lemon wedges

Combine all ingredients except bread crumbs, oil and lemon. Add 1/4 cup of the bread crumbs to mixture reserving the rest. Heat oil on medium high heat in a heavy skillet.

Form mixture into 3“x1/2” patties. Dredge patties into remaining bread crumbs. Cook patties in oil about 3-4 minutes on each side. Place on paper towels to soak up excess oil. Drizzle with fresh lemon juice.

These are really good served with Tatar or remoulade sauce.
