Panko Crusted Shrimp
Japanese bread crumbs gives these shrimp a crisp and light crust.
ingredients
- 1 lb medium raw shrimp, peeled and deveined, tail on
- 2 eggs
- 1 tsp lemon juice
- 1 tsp creole seasoning
- 1/2 tsp hot sauce
- 1 cup milk
- 1 cup self rising flour
- 1 1/2 cups Panko bread crumbs
- Peanut oil or Wesson oil for frying

In a Medium size bowl combine eggs, lemon juice, creole seasoning, hot sauce and milk. Slowly add flour a little at a time whisking constantly to reduce clumps. The batter should have slightly thin. Pour Panko crumbs into a separate bowl. Heat enough oil to about 350 degrees in a deep skillet or deep fryer to completely submerge shrimp. Working in batches, run shrimp through batter and dredge in Panko crumbs. Place shrimp into hot oil and cook about 1-2 minutes on each side. Shrimp cooks very quickly, so watch carefully. Remove shrimp from hot oil and place on paper towels to help soak up excess oil.

Serve with lemon wedges, cocktail sauce or sweet and sour sauce.
