Artichoke, Sausage and Parmesan Stuffing
This show-stopping stuffing features exquisite taste, but the reason it’s one of my favorites is that it’s so easy and reliable - you’ll get great results every time.
ingredients
- INGREDIENTS:
- 3 tablespoons olive oil
- 2 cups green onions, chopped
- 2 large cloves minced garlic
- 2 (14 ounce) cans artichoke
- hearts, drained and chopped
- 2 (13.75 ounce) cans sliced
- mushrooms, drained
- 2 tablespoons (each) chopped fresh
- parsley & thyme
- 1/2 cup butter, cut into pieces 1 teaspoon ground black pepper
- 2 cups chicken broth
- 1 (16 ounce) box of focaccia
- herb seasoned stuffing
- 1 1/2 lbs sweet sausage,
- casing removed
- ground black pepper
- 1 cup of freshly grated parmesan

Heat oil in large skillet on medium heat. Add sausage and sauté while breaking it up with your fork. Add onions, celery and garlic and cook until tender (about 10 minutes). Add artichokes, mushrooms, parsley, thyme, butter and black pepper and. Cook and stir until butter is melted. About 2 minutes longer. Place sausage mixture in a separate bowl.

Place stuffing in large bowl. Add parmesan cheese and mix.

Mix the sausage mixture and the bread mixture together. Fill turkey cavity lightly and cook the remaining stuffing in a generously buttered glass dish. Cover with buttered foil baking for 30 minutes, remove the foil and bake another 10-15 to get it golden brown.

If you are a purest, you can make you own bread cubes by cutting up a 1 lb loaf of focaccia bread and placing on cookie sheets in oven for 15 minutes @ 350…I buy them! I often make the sausage mixture the day before to get a head start. The next day I heat it to lukewarm, add it to the dry mixture/parmesan and proceed with the last step.

You may want to add a bit more broth if you feel it’s too dry. I usually do.

If you want a bread stuffing, add more bread. I don’t.

Do not be afraid to play with the bread, chicken broth combo if you feel the stuffing is a bit dry but be careful not to make it too moist. It usually is moister in the turkey cavity, so it you feel you want to maked your baked stuffing moister, add brot
