Creamed Corn
This was a great addition to Thanksgiving dinner this year but “Best served with BBQ ribs and a Corona on a summer night” -Sue
ingredients
- 1 TBSP butter
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 (16oz) frozen yellow corn, thawed
- 2 cup heavy whipping cream
- 1/2 tsp. salt
- 1/4 tsp. red pepper
- 1/4 tsp. white pepper
- 1 1/2 TBSP quick cook grits
- 1 cup shredded monteray-jack cheese
directions
In large saucepan, melt butter over medium heat. Add onion and garlic; cook for 4 minutes or until onion is tender. Stir in corn, cream, salt, red pepper, and white pepper, bring to a boil, reduce heat and simmer. Add grits and cook for 10-15 minutes or until thickened. Add cheese, stir until melted. Serve immediately.
