Italian Beef Sandwiches
This is what I hope to make for the Chicago game, since we didn’t get Phily Cheesesteaks this year.
ingredients
- RUB:
- 1 tsp salt
- 1 tsp pepper
- 1 tsp granulated garlic
- 4# sirloin tip or bottom round roast
- GRAVY:
- 1 1/4 C water
- 1/4C olive oil
- 3 cloves garlic, crushed
- 1T dried oregano
- 2 tsp salt
- 1 tsp dried basil
- 1 tsp dried red pepper flakes
- 1 tsp black pepper
- 10 crusty french rolls
- Giardiniera (Italian hot pickled veggies)

Mix rub ingredients and rub into roast. Let sit at least an hour, or overnight.

Preheat oven to 450. Roast in roasting pan for 30min.

Meanwhile, combine gravy ingredients in a medium bowl and mix well.. After 30min, turn down the oven to 350. Remove the roasting pan from the oven and pour gravy into the bottom of the pan. Cover and return it to the oven for 1 hr 15min, or until the internal temperature reaches 150. Wrap in foil and refrigerate at least 4hrs, and preferrably overnight. Transfer the gravy, with brown bits to a measuring cup. Add water to make 2C. Cover and refrigerate.

The next day, take the meat out of the refrigerator and slice it as thinly as possible. Slicing while cold will help. This is key.

Now preheat oven to 350. Add the beef and the gravy to a roasting pan. Toss well to coat all the beef with gravy. Cover and cook in the oven for an hour, stirring occasionally. Layer the meat on the rolls with giardiniera.
