Mostly Bean Chili
ingredients
- 1/4 lb. ground beef
- 1 lg. onion, chopped
- 1 lg. sweet green pepper, chopped
- 2 cloves pressed garlic
- 2 Tbsp. chili powder
- 1 tsp. ground cumin
- 1 can (28 oz) tomatoes, packed in puree
- 1 tsp. salt
- 2 cans (16 oz ea) red kidney beans, drained, rinsed

Saute’ beef, onion, green pepper and garlic in a large pot over medium-high heat 4-5 minutes until vegetables are softened and meat is no longer pink.

Stir in chili powder and cumin. Saute’ 1 minute.

Add tomatoes, breaking up large chunks.

Add salt. Bring to a boil. Lower heat, simmer partially covered for 15 minutes.

Stir in beans. Simmer, stirring until heated through.
