SPINACH SALAD WITH MUSTARD DRESSING

ingredients
- For the Salad:
- 2 bunches spinach, washed
- 1 carrot
- 1/4 lb mushrooms, sliced
- 2 eggs, hard-boiled & sliced
- 2 medium tomatoes, diced
- 1/2 red onion, sliced
- 1/2 lb feta cheese, crumbled
- For the Dressing
- 1/2 cup rice vinegar
- 3 Tbsp Dijon mustard
- 6 Tbsp lemon juice
- 1/4 cup yogurt
- 2 Tbsp brown sugar
- salt & black pepper, to taste
- 2-3 Tbsp olive oil

Trim spinach stems & break into salad-sized pieces.

Peel carrots and use peeler to shave large peels.

Toss all salad ingredients together.

Cover salad and chill.
- 5
Whisk together first six dressing ingredients.

Gradually whisk in olive oil.
- 7
Toss with chilled salad just before serving.
