Extra-rich chocolate cake
ingredients
- 2 C flour
- 2 C sugar
- 3/4 t baking soda
- 1/2 t salt
- 1/2 t cinnamon
- 1 C water
- 1/2 C vegetable oil
- 1/4 c butter
- 3 T cocoa
- 2 eggs
- 1/2 C buttermilk
- 1 1/2 t vanilla
- 1/4 C strong brewed coffee
- Chocolate Icing Ingredients:
- 1/2 C butter
- 3 T cocoa
- 16 oz powdered sugar
- 1/2 C chopped walnuts or pecans
- 6 T milk
- 1 1/2 t vanilla
- 1/4 t salt

1. stir together first 5 ingredients

2. Bring 1 cup water and next 3 ingredients to a boil. Add to flour mixture and beat a medium speed until smooth

3. Beat eggs and next 3 ingredients at medium speed with mixer until blended. Stir into flour mixture.

4. Pour into a greased and floured 15 x 10 jellyroll plan. Bake at 350 for 35 minutes. Cool in pan for 10 minutes. Spread chocolate frosting (see below) over the warm cake. Cool completely and cut

Steps for Icing:

1. Melt butter over low heat. Remove from heat and add powdered sugar and remaining ingredients.

I don’t use the entire 16 oz of powdered sugar. I normally use about 1/3 to ½ the bag. You can always add more if you like the icing sweeter.
