Chili Scallops over Linguine
ingredients
- 3 T chili sauce
- 2 t soy sauce
- 1 T chicken broth
- 2 t honey
- 1/2 t ginger powder
- 1/4 crushed red pepper flakes
- 4 scallions, cut into 2" pieces
- 4 cloves garlic
- 2 t peanut oil
- 1 lb bay scallops
- 8 oz cooked linguine

1. Cook the linguine and set to the side

2. Combine chili sauce, soy sauce, honey, broth, ginger and red peppers flakes in a small bowl. Mix well

3. Sauté scallions and garlic in the peanut oil, until the scallions are tender. Discard the garlic. (I mince the garlic and keep it to cook with the scallops).Remove the scallions.

4. Cook the scallions for about 5 minutes. Add the chili sauce mixture to the scallops. Mix well and toss with linguine. Sprinkle the scallions on top.

Cans substitute shrimp for the scallops.
