Tim and Christy's Wedding Cake

You can use the vanilla buttercream recipe from the Mile High Chocolate Cake recipe in this book. This cake has been made for many celebrations, including 2 weddings!

ingredients

super moist butter recipe white cake mix
clarified butter
whole eggs
1 small bottle almond extract
1 small container poppy seeds
18 oz jar raspberry jam
butter cream frosting

directions

Using the amounts called for in the cake mix recipe, mix butter, eggs and cake mix. Use clarified butter instead of plain butter, and whole eggs instead of egg whites. Mix in almond extract and poppy seeds. Bake cakes in round cake pans, cool. Cut cakes to make 4 layers. Create a 4 layer cake: cake, jam, frosting, cake, jam, frosting...etc. Spread jam on cut layers of cake. Each layer can be hardened in the freezer to help with frosting as you go.
