Baby Blue Salad with Balsamic Vinaigrette
Salad with Balsamic Vinegar and Candied pecans
ingredients
- Mixed salad greens
- 4 oz blue cheese
- 2 oranges, peeled and thinly sliced
- 1 pint strawberries, quartered
- Sweet and Spicy pecans
- Balsamic Vinaigrette
- Ingredients:
- 1/2 C balsamic vinegar
- 3 T Dijon mustard
- 3 T honey
- 2 garlic cloves, minced
- 2 small shallots, minced
- 1/4 t salt
- 1/4 t pepper
- 1/2 C to 1 C olive oil
- Whisk all ingredients together but the olive oil. Gradually whisk in the olive oil.
- Sweet and Spicy Pecans
- Ingredients:
- 1/4 C sugar
- 1 C warm water
- 1 c pecan halves
- 2 T sugar
- 1 T chili powder
- 1/4 t red pepper

1 Stir together sugar and warm water until sugar dissolves. Add pecans; soak 10 minutes. Drain, discarding syrup

2 Combine 2 T sugar, chili powder and pepper; add pecans and toss to coat

3 Place pecans on a lightly greased pan and bake at 350 for 10 minutes, stirring once.

Toss greens with the vinaigrette and blue cheese. Arrange orange and strawberries and top with pecans.
