Cilantro Lime Grilled Shrimp
ingredients
Shrimp- 2 lbs extra large (16/20 count) shrimp in shell
- 1/4 cup seasoned rice vinegar
- 1/3 cup fresh lime juice
- 1/3 cup honey
- 3/4 cup firmly packed chopped fresh cilantro stems and leaves
- 3 cloves garlic, minced
- 1 t kosher salt
- 1/4 t freshly ground black pepper
- 1/3 cup canola oil
- vegetable oil for grill

Shrimp
Peel and devein shrimp leaving tail segments in tact.
Cilantro Lime Marinade

In a bowl, whisk together the vinegar, lime juice, honey, cilantro, garlic, salt, pepper and oil. Remove 1/3 cup of mixture to use as final glaze for the shrimp. Pour the remaining marinade over the shrimp and toss to coat. Cover and refrigerate at least 30 minutes to 2 hours.

Remove shrimp from marinade and place shrimp on lightly oiled grill until shrimp are seared with grill marks, 2 to 3 minutes on each side. Once cooked, remove shrimp and baste with remaining marinade
