ingredients

  • 1 butternut squash
  • 2-4 Granny Smith apples, chopped
  • 1 small onion, chopped
  • chicken or vegetable broth
  • 1/4 cup half n half
  • salt
  • rosemary
  • thyme
  • carrot (optional)
  • sweet potato (optional)

directions

Peel and cube butternut squash in 1 inch cubes. Coat lightly in olive oil. Sprinkle with salt, rosemary and thyme. Roast at 400 degrees for 40 minutes. (carrots and sweet potatoes also can be added to the roasting tray). Cool. Place roasted vegetables, onions and apples in processor and blend till smooth. Place puree in large pot and add chicken broth. Bring to a boil and simmer. Add half n half. Salt and pepper to taste.
