Miso Cod
This is based on the Miso Cod dish at Tao and Nobu. If you can find the ingredients it’s a super simple and amazingly tasty dish.
ingredients
- 1/3 cup mirin (found in specialty grocery stores in the Asian section)
- 1/3 cup miso (found in specialty grocery stores, refrigerated section)
- 1/3 cup sake
- 3 tablespoons (packed) brown sugar
- 2 tablespoons soy sauce
- 2 cloves minced garlic
- 1/2 inched diced ginger
- 4 6-ounce sea bass or black cod fillets (each about 3/4 inch thick)
- chopped scallions (optional)

Mix all the ingredients in a bowl and pour over the fish fillets in a casserole dish, coat on all sides. Refrigerate, turning to coat, for at least 2 hours and up to 6.

Pre-heat the broiler, placing rack 8 inches from the top.

Remove fish from marinade and place on a rimmed baking sheet lined with aluminum foil.

Broil fish until opaque in the center 6-10 minutes depending on thickness.

Remove from oven and serve with brown rice and stir fried veggies. Garnish with scallions.
