ingredients

  • 1 iceberg lettuce, chopped big
  • 2 tomatoes, cut into wedges
  • 1 cucumber, cut into wedges
  • 1 green onion, sliced
  • 1/4 cup black or Greek olives, sliced
  • 3/4 cup cubed or crumbled feta cheese
  • Dressing:
  • 1/2 cup salad oil
  • 1/4 cup red wine vinegar
  • 1/4 cup chopped parsley
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp oregano

    Make dressing and refrigerate

  • 2

    Make salad.

  • 3

    Toss with dressing before serving

  • 4

    Note: Dressing is best when made ahead
