ingredients

  • 1/2 cup chopped onion
  • 1 jalepeno pepper, minced
  • 1 Tbsp cooking oil
  • 6 eggs, beaten
  • 6 bacon strips, cooked and crumbled
  • 1 small tomatoe, chopped
  • 1 ripe avocado, cut into 1" slices
  • 1 cup shredded co-jack cheese or Monterey jack cheese (split into 2- 1/2 cups)
  • Salt and pepper to taste
  • Salsa optional

    In a skillet, sauté onion and jalapeno in oil until tender; remove with a slotted spoon and set aside.

    Pour eggs into the same skillet; cover and cook over low heat (3-4 minutes)

  • 3

    Sprinkle with onion, jalapeno, bacon, tomato, avocado and 1/2 cup cheese.

    Fold omelet in half over filling.

  • 5

    Cover and cook for 3-4 minutes or until eggs are set.

  • 6

    Sprinkle with remaining cheese.
