Maureen's Shepherd's Pie
A hearty and comforting dish.
ingredients
- Mashed Potato
- 4 large potatoes, peeled & cubed
- 1 Tbsp butter
- 1 Tbsp finely chopped onion
- 1/4 c. shredded cheddar cheese
- salt & pepper to taste
- Beef Mixture
- 1 1/2 lb. ground beef
- 1 Tbsp vegetable oil
- 1 medium onion, chopped
- 1 Tbsp ketchup
- 2 Tbsp all purpose flour
- 1 pkg brown gravy mix
- 1 c. water
- 1/4 c. worcestershire sauce
- 1/4 c. shredded cheddar cheese
- half 10oz bag frozen peas & carrots
- half 10oz bag frozen corn

1. Bring large pot of salted water to a boil. Add potatoes and cook about 15 minutes. Drain and mash. Mix in butter, 1 Tbsp finely chopped onion, and 1/4 c. shredded cheddar. Season with salt & pepper. Set aside.

2. Preheat oven 375 degrees

3. Heat oil in a large frying pan. Add medium chopped onion and cook over medium heat until clear. Add ground beef & worcestershire sauce. Cook until well browned. Pour off excess fat. Mix gravy packet with 1 c. water. Add to ground beef along with ketchup. Use 2 Tbsp flour to thicken. Simmer 5 minutes.

4. Spread the ground beef mixture in an even layer on the bottom of a 8x8 casserole dish(2qt). Combine frozen peas carrots & corn. Next spread a layer of peas carrots & corn. Top with the mashed potatoes. Sprinkle with remaining 1/4c. shredded cheddar.

5. Bake uncovered in preheated oven 25-30 minutes.
