Whole Wheat Banana Spice Bread
This came from a friend of mine that has now moved away to Hawaii. It was from her great grandmother. I bought a mini loaf pan (has 4 mini-loafs in it) and made mini loafs to give as Christmas gifts!
ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 3-4 mashed ripe bananas (throw in more if desired!)
- 2 cups whole wheat flour
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 1/4 tsp. cinnamon
- 1/8 tsp allspice
- 1/8 tsp ground cloves
- 1/4 cup nuts (optional)
directions
Cream butter, add sugar, then beat in eggs. Add bananas, then flour sifted with soda and other spices. Add nuts last, if desired. In a generously greased loaf pan, bake 40-50 minutes in a 350 F oven (or put 1 cup batter into each of the 4 mini-loaf pans and bake for 35 minutes or until done).

John and I like to use fresh wheat flour. I recently bought a commercial blender to grind whole wheat berries into fresh flour! The difference is amazing. Current research claims wheat flour loses its nutrients the longer it sits out, already ground.
