Maple-Roasted Butternut Squash
A very rich but incredibly savory dish. I wowed some people at a dinner party with this one! This dish is rich, so you can adjust oil, syrup, sage, and bacon to your taste.
ingredients
- 1 large butternut squash
- 1 head garlic, separated but not peeled
- 2 Tbs olive oil
- 2 1/2 Tbs pure maple syrup
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 to 3 slices of thinly sliced pancetta, chopped (I use bacon)16 whole fresh sage leaves

Preheat oven to 400.

Peel and seed the butternut squash and then cut into 3/4 to 1 inch cubes.

Place the squash and the whole unpeeled garlic cloves on a baking pan in one layer.

Toss with olive oil, maple syrup, salt and pepper, and bake for 20 min.

Sprinkle pancetta/bacon and the sage leaves evenly over the butternut squash and continue to bake for another 20 minutes until squash and garlic are tender and caramelized.
