St. Louis Potatoes

ingredients
- 1 tsp salt
- 1/2 tsp ground fresh black pepper
- 1/8 cup extra virgin olive oil
- 6 large potatoes
- 6 small onions, sliced
- 9 bacon strips, cooked and crumbled OR I prefer Armour Real Bacon Crumbles
- 3/4 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup grated parmesan cheese(not shredded)I always go for reduced fat cheeses when available
