Soy sauce Grilled shrimp with Spinach Salad
Delicious!
ingredients
- For the shrimp:
- 1/4 cup soy sauce
- 2 limes, juiced
- 2 tsp. honey
- 2 inch piece ginger, finely grated
- 4 cloves garlic, minced
- 1/4 cup canola oil plus more for brushing
- 12 oz. large (21-24) shrimp peeled, tail on, deveined
- Kosher salt and Pepper
- For spinach salad:
- 1/4 cup rice vinegar
- 2 TBSP soy sauce
- 2 TBSP. canola oil
- 1 TBSP.toasted sesame oil
- 2 green onions, thinly sliced
- 8 oz. baby spinach
- 1/2 cup chopped salted peanuts

1. Whisk together first 6 ingredients together in a medium bowl until combined. Add the shrimp to the marinade and refrigerate for 15 minutes

2. Whisk together spinach salad ingredients except the spinach and peanuts in a small bowl

3.Heat the grill or grill plate to high. Remove the shrimp from the marinade and brush with canola oil and season with salt and pepper. Skewer the shrimp and grill 2-3 minutes or until just cooked through

4. Toss the spinach with the vinaigrette and mound on a serving platter. Arrange shrimp around the spinach and spoon over some more of the dressing on the shrimp. Scatter the peanuts over the salad and shrimp.

If you don't have a micro-planer to grate the ginger, I highly recommend getting one!
