Buca Di Beppo Chicken Saltimbocca
When I first tried this at Buca, I was in love. This recipe is 99% the same as served in their restaurant!~
ingredients
- 4 chicken breast (5 oz each)
- 4 think slices prosciutto ham
- 1 TBS. fresh sage
- 3 oz. olive oil
- 1 oz. flour
- 5 oz. artichoke hearts, quartered
- 1/2 oz. capers
- 4 Oz. white wine
- 2 Oz. fresh lemon juice
- 2 Oz. heavy cream
- 1 TBS butter
- salt and pepper

1.Lightly salt and pepper chicken breast.

2. Place slice prosciutto on top of the chicken and pound each breaast to 3/8 inch thickness

3. Heat olive oil in saute pan

4. Lightly flour the chicken and place in heated oil, prosciutto side down
- 5
5. Brown one side, turn and brown the other, remove from pan.

6.Drain excess oil and deglaze pan with white wine
- 7
7. Add artichokes, fresh lemon juice, cream, butter and chicken and cook until sauce is thickened and reduced

8. On a large platter, place chicken breasts topped with reduced sauce and sprinkle with capers
