Pork - Pork Chops and Rice Maria

ingredients

  • 7 cups Rice, raw
  • 50 Pork Chops
  • 1/2 cup Fat
  • 2 lbs (1 qt) Onions, chopped
  • 1 cup Oil
  • 1 #10 can (3-1/4 qts) Tomatoes
  • 1 1/2 qts Water
  • 1 cup Green Pepper, cut into thin strips
  • 5 Tblsp Salt
  • 1 1/2 tsp Black Pepper

directions

Arrange rice in two 12 X 20 X 4" pans. Brown pork chops on both sides in hot fat. Arrange pork chops on top of rice. Saute onions and peppers until golden brown. Add tomatoes to mixture. Bring to boil. Pour mixture over pork chops. Cover tightly with foil. Bake 50 minutes at 350 degrees or until chops are tender and rice is fluffy.
