Pork - Baked Pork Chop and Zucchini Spanish Style

ingredients

  • 1 1/2 tsp Salt
  • 1 tsp Accent
  • 1/2 tsp Chili Powder
  • Dash of Pepper
  • 4 Pork Chops 1/2 inch thick
  • 1/2 cup Rice, uncooked
  • 3 1/2 cups Tomatoes, solid pack
  • 1/2 cup Green Pepper, chopped
  • 1/2 cup Onion, chopped
  • 1/2 cup Ripe Olives, chopped
  • 2 cups Zucchini, thinly sliced
  • 1/4 cup Parmesan Cheese

directions

Mix first 4 ingredients. Trim fat from chops and heat in skillet. Remove trimmings and brown chops. Season with 1 tsp of chili mixture. Drain off fat. Add rice, tomatoes, green pepper, onion, olives and sugar. Border with zucchini. Sprinkle all the remaining chili mixture. Cover and cook, stirring occasionally, for one hour until pork is done. Divide into individual casseroles. Cover with cheese and melt.
