Santa Fe Potato Cakes
ingredients
- 1 pkg (30oz) frozen shredded hash brown potatoes
- 1 c shredded pepper jack cheese
- 1/2 c sour cream
- 1/2 c milk
- 2 eggs
- 1/4 c sliced green onions
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp ground cumin
- 1/4 c all purpose flour
- 3 tbs vegetable oil

Combine first nine ingredients; let stand for 10 minutes.

Stir in flour.

In a large skillet, drop 1/4 cupfuls mixture into hot oil.

Cook over medium high heat 6 minutes or until golden, turning once.

Drain on paper towels.

Serve with sour cream.
