Another variation on the recipe for Lefse I believe came from Helen Halseth who was married to Irvin.

ingredients

  • 8 cups mashed potatoes
  • 1/2 cup whipping cream or half & half
  • 8 Tbs shortening
  • 1 tsp salt
  • 1 tsp sugar
  • 3/4 cup flour

directions

    Cook and mash potatoes adding cream and salt while mashing. Measure potatoes and add 1/2 cup flour to each cup of potatoes. Work until very smooth, then form into long roll and cut into approximately the size of an large egg.

    Roll each ball out thin and fry in dry hot fry pan till brown. Lay on cloth or wax paper until cool, then wrap in cloth and store.
