Lefse
Lefse has been a long time tradition among all Norwegians for centuries. There are probably as many variations as there are Norwegian families. You just have to experiment with these recipes to see which works best for you.
ingredients
- 5 large potatoes
- 1/2 cup sweet cream
- 1 tsp salt
- Melted butter (optional to work into dough)

Cook and mash potatoes adding cream and salt while mashing. Measure potatoes and add 1/2 cup flour to each cup of mashed potatoes. Work until very smooth, then form into a long roll and cut into approximately the size of an large egg.

Roll each ball out thin and fry on dry hot griddle until brown. Lay on cloth or wax paper until cool, then wrap in cloth and store in the refrigerator.

Tastes wonderful warmed with butter and/or sugar. Lefse has been been used as a bread with a meal or filled and eaten with a meat filling. You can buy electric griddles that are made specifically for frying lefse.
