Miami-Spiced Coconut Rice
ingredients
- ! can fat-free, reduced sodium chicken broth: 14 oz
- 1 c reduced-fat unsweetened coconut milk
- 1/2 c water
- 2 t. grated fresh ginger
- 1/4 t. vegetable oil
- 2 t bottled minced garlic
- 1/4 t salt
- 1Â 1/2 c long-grain white rice
- 1 c fresh mango
- 2 T minced fresh cilantro

Pour broth, milk, water, ginger, garlic, oil, salt into saucepan, bring to boil. Add rice, stir, reduce heat to low and simmer, covered until rice is tender—about 20 minutes.

While rice cooks, dice mango and mince cilantro. When rice is done, fluff with fork and add mango, cilantro.
