Banan-Nut bread
ingredients
- 1 cup mashed very ripe banana (about 3 small)
- 1/2 cup sugar
- 1/2 cup plain nonfat yogurt
- 1/4 cup margarine, melted
- 1 tsp vanilla extract
- 1 egg
- 1 egg white
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 tsp baking soda
- 1/4 salt
- 1/4 cup chopped pecans toasted
- Baking spray
directions
Combine first 7 ingriedients in a large bowl; beat a medium speed of an electric mixer until well blended. Combine flour and next 3 ingridients, stir in pecans. Add flour mixture to banana mixture, stirring just until moistened. Spoon batter into loaf pan coated with baking spray and flour. Bake at 350 for 1 hour and 5 minutes. Let cool.
