Glazed Salmon with Cantaloupe Salsa
ingredients
- 1 Tablespoon butter, melted
- 1/2 cup brown sugar
- 3 Tablespoons soy sauce
- 2 Tablespoons lemon juice
- 2 Tablespoons white wine
- 2 pounds salmon filets
- 3/4 cup cantaloupe, chopped
- 1/4 cup red onion, chopped
- 2 Tablespoons fresh cilantro, chopped
- 1 cup cherry tomatoes, halved
- 2 Tablespoons olive oil
- 1 Tablespoon lemon juice
- 1 teaspoon jalapeno pepper, minced and seeded
- salt and pepper to taste

In a shallow glass dish, mix together the first 5 ingredients. Add salmon and cover with the marinade. Refrigerate for 30 min.-3 hours.

Place the salmon and marinade on foil-lined pan, and bake at 400° for 15 minutes, or until salmon is done, basting with sauce. Salmon may be grilled too.

While salmon bakes, combine the cantaloupe, onion, cilantro, tomatoes, olive oil, lemon juice, and jalapeno in a small bowl. Season with salt and pepper. Let stand for about 15 minutes.

Spoon Cantaloupe Salsa onto the salmon, and serve.
