Smoky Pinto Beans
Fantastic wrapped in a tortilla with eggs or just with cheese and guacamole. Great addition to any Mexican meal.
1 14 oz. can pinto beans
1 tsp chipotle puree
1 tbsp vegetable oil
1 tsp balsamic vinegar
1 tsp brown sugar
¼ tsp salt
Drain canned beans and toss with remaining ingredients. Heat in a small pot over low heat, or in the microwave
oven.
Serve hot as a side dish, or use in huevos rancheros, burritos, or panini’s,
