Surprise Cupcakes

ingredients
- Cream Cheese Filling:
- 1 8oz cream cheese
- 1 egg
- 1/2 cup sugar
- 1 small package of chocolate chips.
- Cupcakes
- 3 cups flour
- 2 cups sugar
- 1/2 cup cocoa powder
- 1 tsp salt
- 2 tsp baking soda
- 2 cups water
- 1 cup oil
- 2 Tbsp vinegar
- 1 tsp vanilla

To make cream cheese filling mix cream cheese, egg and sugar. Then add in chocolate chips. Set aside.

Mix flour, sugar, cocoa powder, salt, and baking soda in a bowl. Add in water, oil, vinegar and vanilla. Fill cupcake holders 2/3 full. Add 1 tsp cream cheese mixture to each cupcake. Sprinkle chopped nuts on top. Bake at 350 for 20 min.

Makes 36 cupcakes. They freeze well.
