Chicken with Orechetti

ingredients

  • 1 pound boneless chicken breasts, seared and cut into strips
  • 4 tablespoons olive oil
  • 1 cup grape tomatoes, halved
  • 2 cloves garlic, chopped
  • 1 bunch fresh spinach
  • 1 can white beans, rinsed and drained
  • 3/4 can chicken broth
  • 1 pound orechetti pasta
  • salt, pepper and crushed red pepper to taste
  • 1/2 cup parmesan cheese
  • ~reserve 1 cup of pasta water

    Cook pasta according to package directions.

    In a large skillet, add olive oil and garlic. Saute over low heat. Add spinach and reduce to just wilted. Add beans, tomatoes, chicken broth and seasonings. Add cooked pasta and chicken strips. Simmer and toss in parmesan cheese.

    If necessary, add the reserved pasta water a little at a time to alter the consistency of the broth.
