Hamburger or meatball soup
ingredients
- 2 lbs. Ground chuck *
- 2 stalks celery diced
- 1 lg. Or 2 small onions
- 2 carrots (diced)
- 3 garlic cloves minced
- 4 med. Potatoes (cubed)
- 1 package frozen corn (or canned corn)
- 1 package frozen green beans (or canned)
- 1 large can diced tomatoes undrained
- 2 32 oz containers beef broth or
- stock, water if needed
- 1 large tbs. Tomato paste
- salt and pepper to taste

In a soup pot, brown the ground chuck in a little oil. Drain and set aside meat. Saute the onion, garlic, celery and carrots in pan until the onion begins to turn translucent. Return the meat to the pan with the sauteed vegetables. Add the tomato paste and brown. Add the stock and water (if needed). Empty the diced tomatoes in as well as the cubed potatoes, corn and green beans. (you can also add other vegetables if you wish)

Cook until potatoes are done and everything has melded well together.
notes
*you can make meatballs and brown them in oil instead of frying the ground beef. The same recipe applies here as well. Just make a meatball recipe of your choosing and keep the meatballs small.
