Chicken Cacciatore

ingredients
- 1 tsp freshly ground black pepper, plus more to taste
- 3 tbsp olive oil
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 6 chicken cutlets
- 2 tsp salt, plus more to taste
- 2 garlic cloves, finely chopped
- 7 0z diced tomatoes can (1/2 can)
- 1/2 cup dry white wine (optional)
- 2 tablespoons drained capers (optional)

1. Saute peppers in oil for 3 minutes, season and set aside.

2. Brown chicken with garlic, season and add diced tomatoes, 1/4 of bell peppers, wine, and capers. Cover and simmer for 25 minutes. Add remaining bell peppers for simmer 10 more minutes.

3. Remove chicken and peppers. Reduce sauce to desired thickness and pour over chicken and peppers.

Aunt Lucille gave Cecilia the recipe at her bridal shower. Chris made a few additions to it, i.e. garlic, wine, and capers. It's a lovely dish, ez to whip up and very healthy! Serve with baked potatoes or rice.
