artichoke frittata
ingredients
- 1 1/2 small jars marinated artichoke hearts, chopped
- 1 cup cheddar cheese, shredded
- 4 eggs
- 1 cup chopped onion
- 1 clove garlic, minced
- parsley
- olive oil
- bread crumbs - 1/2 to 1 cup
directions

saute onion and parsley in olive oil, until soft

add artichoke hearts

put in bowl

add cheese, eggs, parsley and bread crumbs (just enough to bind mixture)

mix and pour into 8x8 ungreased pan

bake at 350 for about 20 minutes
