artichoke frittata

ingredients

  • 1 1/2 small jars marinated artichoke hearts, chopped
  • 1 cup cheddar cheese, shredded
  • 4 eggs
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • parsley
  • olive oil
  • bread crumbs - 1/2 to 1 cup

directions

  • 1

    saute onion and parsley in olive oil, until soft

  • 2

    add artichoke hearts

  • 3

    put in bowl

  • 4

    add cheese, eggs, parsley and bread crumbs (just enough to bind mixture)

  • 5

    mix and pour into 8x8 ungreased pan

  • 6

    bake at 350 for about 20 minutes
