Paul's Pumpkin Bars

ingredients

Pumpkin Bars
  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 2 tsp Ground Cinnamon
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 4 Eggs
  • 15 oz can Pumpkin
  • 1 2/3 cups Sugar
  • 1 cup oil
  • 3/4 cups Chopped Pecans
  • Pecan Halves (optional)
Cream Cheese Frosting
  • 3 oz Cream Cheese
  • 1/4 cup Butter or Margarine
  • 1 tsp Vanilla
  • 2 cups Sifted Powdered Sugar

Pumpkin Bars

  • 1

    In medium bowl, stir together flour, baking powder, cinnamon, baking soda, and salt; set aside.

    In a large mixing bowl, beat together eggs, pumpkin, sugar, and oil. Add the flour mixture; beat until well combined. Stir in chopped pecans.

    Spread batter in an ungreased 15“x10”x1" baking pan. Bake at 350° for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack. Frost with cream cheese frosting. Top with additional pecan halves. Cut into squares. Store in refrigerator.

Cream Cheese Frosting

In a medium bowl beat together cream cheese (softened), butter or margarine (softened), and vanilla until fluffy. Gradually add sifted powdered sugar, beating until smooth.
